Beef Tips and Rice


7 tbsp Olive Oil
1/2 cup flour
3 pounds stew meat
3 tbsp Worcestershire sauce
3 tbsp soy sauce
1 chopped sweet onion
3 garlic cloves, crushed
1 tsp salt
1 tsp pepper
1/4 cup powdered roux
2 cups water
2 cans cream of chicken soup
Toss meat with flour until thoroughly coated.
In hot skillet, sear meat in 4 tablespoons olive oil until browned on all sides.
Place meat in crock pot. Add remainder of olive oil to skillet and sauté onion and garlic. 
Add roux. Loosen pan dripping with a tablespoon of water.
Add onions and garlic to crock pot. Add water and soup to crock pot and cook for 3 – 4 hours on low.

Paula Deen Recipe...Low Country Cookies

Low Country Cookies

Ingredients
Filling:

1 (16-ounce) box graham crackers
12 tablespoons (1 1/2 sticks) butter
1 cup sugar
1 egg
1/2 cup milk
1 cup chopped pecans
1 cup or 3 (1/2-ounce) cans shredded coconut
Topping:

2 cups powdered sugar
1 teaspoon vanilla
4 tablespoons (1/2 stick) butter
3 tablespoons milk
Directions
For the filling: Line a 13 by 9-inch pan with whole graham crackers. Melt the butter in saucepan and add sugar. Beat the egg and milk together; add to butter mixture. Bring to a boil, stirring constantly. Remove from heat. Add the nuts, coconut, and 1 cup graham cracker crumbs. Pour over the crackers in the pan. Cover with another layer of whole graham crackers.

For the topping: Beat all the ingredients together and spread over top layer of crackers.

Chill. Cut into squares.

My Absolute Favorite Cajun Dish--Round Steak Rice and Gravy

When I think back at my absolute favorite Cajun dish that totally reminds me of home it would have to be Round Steak Rice and Gravy. Nothing is dearer to a homesick heart than rice and gravy. O.K., I know it sounds rather simple, however the simplicity of this dish is the essence of Cajun Cooking. The gravy is not like gravy from the dinner that is thick and gloppy. It is thin and ladled over perfectly cooked rice. To make this dish a round steak is gently braised in a covered pan on the stovetop. The liquid that is formed from this slow cooking is so delicious! This gravy in my opinion is more important than the meat. My favorite sides with rice and gravy would be any type of southern pea, fresh tomatoes, cucumbers, and cantaloupe.

Round Steak Rice and Gravy
2.5 lbs round steak
2 T oil or enough to cover bottom of pan
1 cup diced onions
1/2 cup diced celery
3 cloves garlic, smashed & coarsely chopped
1-1/2 cups water or beef broth 
2 tablespoon cornstarch
3 tablespoons water
Season to taste 

Heat oil over high until it shimmers then add the meat. Brown the meat until a dark-brown (but not burned) crust develops on the bottom of the skillet. Push meat to one side of the skillet. Add chopped onions, celery and garlic. Sauté vegetable until tender. Reduce heat to medium, and continue cooking vegetables until soft. Add water or beef broth bring to a simmer. Season to taste. Reduce heat to low, cover, and simmer for 50 minutes, or until fork-tender. In a cup stir together cornstarch and water until a smooth paste has formed. Temper, then add to saucepot and cook uncovered until sauce thickens. Serve over hot cooked rice.

Royal Wedding

I'm so excited about the Royal Wedding....

On Friday morning I'll be waking at 4 a.m. to attend a Tea in honor of the Royal Couple. This is of course the "wedding of the century" and I plan to attend in some form or fashion. In a small town located in the Heart of Texas there will be a group of friends glued to the television for this occasion.

Everyone loves a good wedding and the company of good friends. Our goal is to to raise our TEA CUPS to the Royal Couple and enjoy a wonderful English Breakfast. Cannot wait to see the dress and to witness the wave.
Hope the best for Kate Middleton and Prince William. Want to say THANKS to our gracious hostess...Carole Dickey...!!!!

Loose Leaf Tea vs. Tea Bags

What is the difference between loose-leaf tea and tea bags?

Loose-leaf teas are normally made up of whole leaves or broken leaves,

Tea bags are usually filled with fannings or dust.

When processed, raw tea leaves are graded from best to the worst.

BEST---the bud and the first two leaves of the shoot
WORST—called fannings

In the US we often see the term Orange Pekoe when we buy tea. Orange Pekoe is not a special kind of tea; it is a grade type of measurement about the tea leaves' size and condition.

Terms that are used often when grading black teas:

Fannings

The whole leaf is the best grade of tea and it allows the water to bloom and extract the flavor characteristics of the tea. Tea bags made from fannings and dust do not have bloom area for this extraction. The tea drinker enjoys the whole tea leaf unfolding in the cup while the tea is infusing.  


Sensitive to CAFFEINE?

If you are sensitive to caffeine but love caffeinated tea.....there is hope!  Steep the tea in hot water for a minute or so, you’ll remove, or wash over 50% of the caffeine from the tea.  This means you can steep again from the same leaves/bag and each time you do, you reduce the caffeine significantly.

I Love Tea!


I love tea and it’s nice to partake in this fulfilling activity. Drinking tea is an art, and the procedure involved in making and serving this beverage is special.  Tea making is not just boiling some water and sticking a tea bag in your cup, instead the process of making a great cup of tea consists of much, much more.
